I'm talking about Tzatziki, the classic sauce made with Greek yogurt, cucumbers and garlic. And today we will discover together how to prepare this recipe as simple as it is good!

Ingrediants
For the sauce
- 340 g of Greek yogurt
- a few mint leaves
- 1 teaspoon of oregano
- 1 tablespoon of extra virgin olive oil
- Optional: 1 pinch of pepper
- 1 pinch of salt
- 1 clove of garlic
- 1 teaspoon of untreated lemon juice
- 200 g (1 medium) of cucumbers
To serve
- 1 handful of black olives
- A few slices of cucumbers
Materials Needed
- Manual or electric grater
- Colander
- Bowls
- Wooden spoon
- Mortar and pestle (or spoon)
- Vegetable peeler
Preparation
- Wash a cucumber and remove the peel with the help of a vegetable peeler, then grate the pulp with an electric or manual grater.

Some recipes involve grating the cucumber without removing the peel. Instead, I recommend grating it after peeling it carefully to avoid the typically bitter aftertaste of the peel and to make the dish more digestible.
In any case, those who love strong flavors and do not complain of digestive difficulties, can grate the cucumber with the peel (which is also a source of vitamin C and vitamin K).- Place the grated cucumber pulp in a colander and let it drain for at least 40-50 minutes. When finished, you will get a very dry product.
- Crush a clove of garlic in a mortar together with a few mint leaves until creamy. However, it is not recommended to chop the garlic and mint in the blender.
- Pour the Greek yogurt into a bowl, season with salt, add the pepper (optional), lemon juice and a tablespoon of extra virgin olive oil.
- Season the sauce with oregano to taste.
