What is that
Cotechino is a sausage to be cooked typical of northern Italy, based on pork and pork rind (trinomial nomenclature: Sus scrofa domesticus). From an aesthetic point of view, cotechino is very similar to pot salami, while for what concerns the filling it is totally in common with that of the zampone.
