Who among us doesn't like tarts? They are so good, greedy, fragrant ... Small problem: the calories! So I created a really fabulous shortcrust pastry for pies, with a much lower caloric percentage than the classic recipe! The shortcrust pastry that I propose today is prepared with wholemeal flour, brown sugar, only 2 egg yolks and without butter.

Ingrediants
Doses for shortcrust pastry for a mold with a diameter of 28 cm:
- 40 ml of water
- 260 g of wholemeal flour
- 5 g of baking powder
- Untreated lemon zest
- 40 ml of corn oil
- 1 pinch of salt
- 20 g (1 medium) of egg yolks
- 60 g (1 medium) of eggs
- Whole product. bio: 70 g of cane sugar

- Row lemons

Preparation
- In a bowl, combine all the dry ingredients, namely wholemeal flour, brown sugar, sifted yeast and salt. Flavor the powders with grated lemon zest (or vanilla).
- In the center, combine an egg, a yolk, the seed oil and the water. Mix thoroughly, gradually incorporating the powders.
- Transfer the pastry to the work surface and knead by hand until a compact, non-sticky dough is obtained. If necessary, add more flour.
The right idea
To obtain an even less caloric shortcrust pastry, it is possible to replace the brown sugar with 35 g of fructose.- The wholemeal shortcrust pastry is ready and can be rolled out immediately with a rolling pin. If you don't use it immediately, you can wrap the pasta in cling film and keep it in the fridge for 2-3 days. To prolong the shelf life, it is advisable to roll out the pastry, roll it together with a sheet of baking paper: the roll can therefore be frozen and used as needed (after defrosting in the fridge).

It is distinguished by its greater intake of fiber and its lower cholesterol and saturated fat content.
