For the dough
- 150 g of wholemeal flour
- 2 tablespoons of extra virgin olive oil
- 5 g of salt
- 8 g of instant yeast
- 240 ml of vegetable ricotta whey or 240 ml of water
- 80 g of soy flour
For the filling
- 100 g of tomato puree
- Vegetable product: 50 g of fresh ricotta
- 50 g of vegetable cheese
- 4 g of Spaghetti seaweed
- 50 g of bean sprouts

To make this pizza we used the vegetable whey we obtained during the preparation of the vegan ricotta. Those who do not have it, can still replace it with plain water or soy milk.- First, put the spaghetti seaweed to soak in warm water.
- Preheat the oven to 180 ° C.
- In a bowl, mix the whole wheat flour with the soy flour. Then add the sifted instant yeast and salt.
- In the center, combine the liquids, that is the vegetable ricotta whey (or plain water) and a tablespoon of extra virgin olive oil.
- Knead thoroughly until a soft and moldable dough is obtained.
- Pour a tablespoon of oil into a 28 cm diameter baking dish; distribute the dough, crushing it with your hands. Fill the dough with the tomato sauce.
- Bake the pizza with the tomato base in a preheated oven and cook for 15 minutes.
- Remove the pizza from the oven and fill as desired with slices of vegetable pea cheese, tufts of vegetable ricotta, bean sprouts and spaghetti seaweed (well squeezed from the soaking water).
- Finish cooking in the oven for another 10 minutes.
- Serve the pizza in slices.
