As we know, syrup in general is defined as a concentrated solution of sugar in fruit juice, and is widely used in the preparation of soft drinks, slushes, sorbets and cocktails. Ingrediants
- zest of 3 lemons and 500 ml of untreated lemon juice
- 250 g of sugar

Preparation
- Wash 10 lemons in cold running water and dry them well.

For best results, it is recommended to use chemically untreated lemons, with thick but very juicy rind.- Squeeze the lemons and weigh the juice: the weight of the juice must be 500 ml.
- Pour the lemon juice into a saucepan and add a quantity of sugar equal to half the weight of the lemons (250 g, in this case): turn on the heat and grate the zest of 2 large lemons.
- Keep boiling for a few minutes, taking care to stir often to avoid caramelizing the sugar.
- Remove the liquid from the heat and strain through a sterile gauze or a fine mesh strainer.
- Boil the syrup again for a few minutes.
Why boil the syrup again after filtering it?
This operation is important to ensure the perfect preservation of the syrup. In fact, we will pour the boiling liquid into sterilized bottles (whose temperature must be identical to that of the syrup). The same operation is performed for the preparation of jams (as we did for the preparation of strawberry jam and melon jam).- Sterilize two bottles with a capacity of 250 ml, letting them boil in water for 20 minutes.
- Remove the bottles and caps from the water and pour into the pot immediately with the still hot syrup.
- Allow to cool to room temperature until the cap is sealed.
- The lemon syrup will keep perfectly for 10-12 months.
