- 30 g of flax seeds
- 70 ml of water
- 100 ml of soy milk
- 1 pinch of salt
- Whole food, organic: 1 teaspoon of brown sugar

- 75 g of wholemeal flour
For the caramel
- Whole food, organic: 100 g of cane sugar
- 1 tablespoon of water

Preparation
- Finely blend the flax seeds and combine the powder obtained in a small bowl. Pour in the water and mix: let the mixture rest until the mass has taken on a gelatinous and dense consistency.
- Meanwhile, in a saucepan, combine the soy milk, seed oil, salt and brown sugar: bring to a boil.
- Remove the saucepan from the heat and add the wholemeal flour, all at once. Stir with a wooden spoon until you get a ball.
- Return the pan to the heat and cook for about a minute, maintaining a moderate flame: an opaque patina should form on the bottom of the pan.
- Transfer the mixture to a bowl and let it cool for about ten minutes. At this point, mix the flaxseed paste: the mixture should be soft and compact.

- Line a baking sheet with parchment paper.
- Transfer the dough into a pastry bag with a smooth spout and make many tufts with a diameter of about 2 cm. Roll each tuft of dough in your hands in order to obtain many balls.
- Bake the biscuits in the oven at 200 ° C for 15 minutes. Then lower the temperature to 180 ° C and continue for another 10 minutes. Turn off the oven and leave the sweets inside with the door ajar for 10-15 minutes.
