- 1 grated untreated orange peel
- 120 g of lean ricotta

Preparation
- First prepare the base of the bars. In a bowl, mix the wheat bran with the egg white, the fructose, the powdered proteins and the skimmed milk: you will have to obtain a firm but easily moldable mixture.
- Spread the mixture obtained on a sheet of baking paper, shaping it with a spatula or a knife until obtaining a rectangle measuring 10X20 cm. It is advisable to level the surface of the rectangle with a moistened knife.

It is possible to make the base rectangle by distributing the dough in a plum-cake mold lined with baking paper.- Bake the base of the bars in a preheated oven at 180 ° C for 15 minutes. Leave to cool completely.
- At this point, prepare the cover of the bars. Warm the milk and dissolve the powdered gelatin and fructose in it.
- Mix the lean ricotta (sieved if possible) with the unsweetened cocoa powder and the mixture of milk, gelatin and fructose: you will have to obtain a thick and compact cream.
- Pour the ricotta and cocoa cream on the crunchy base and level with the help of the knife. Let it rest in the fridge for at least an hour, to allow the gelatine to act and thicken.
- Remove the cake from the fridge and get 6 bars. Grate some orange zest and distribute on the surface of the bars.
