In today's video lesson we will learn how to perfectly clean and cut one of the sweetest and most fleshy fruits of the summer: I'm talking about melon. I still remember when, as a child, I watched with amazement my mother while she was cutting melon slices, wondering if I would never have been able to chop that fruit as well as she was. Yes, because the problem for me was to get smooth melon slices of about the same size, and to be able to remove as much pulp as possible from the skin (epicarp). in short, I have optimized the melon cutting technique: and today I am here to show you what I have learned!

- Sharp knife
- Steel spoon

Preparation
Before buying the melon it is a good rule to ascertain its quality: for the same size, it is advisable to always choose the heaviest and most fragrant. A good melon must not have soft areas or bruises on the skin.
- First, wash the melon thoroughly, removing any traces of soil.
- Remove the ends with a sharp knife - this will make it easier to cut the melon.
- Arrange the melon vertically on a cutting board, resting it on one end.
- Make a clean cut with a sharp knife, trying to divide the melon into two roughly equal halves.
- Remove the seeds and filaments with a steel spoon, using a knife (if necessary).
- Now place half of the melon on the cutting board (horizontally) and obtain fairly regular slices. To obtain perfect slices, follow the natural grooves of the melon. It is recommended to refer to the video.
- To remove the peel (epicarp), score each slice of melon with a smaller knife, leaving 5mm from the epicarp.To facilitate the operation, it is possible to turn the slice of melon (with the pulp facing the hand) and follow, with the knife, its entire length.
- To present the melon even better, it is possible to prepare simple balls with the help of a digger.
